The Ultimate Camping Snack Mix
What you need:
- 3 cups corn chex
- 3 cups rice chex
- 3 cups wheat chex
- 2 cups bagel chips
- 2 cups pretzel twists
- 1 cup Cheetos
- 1 cup peanuts
- 1 1/2 sticks butter, melted
- 1/3 cup Worcestershire sauce
- 2 teaspoons garlic powder
- Kosher salt
Set a slow cooker over high heat and mix together corn chex, rice chex, wheat chex, bagel chips, pretzel twist, Cheetos and peanuts inside. Whisk together the melted butter, Worcestershire sauce, garlic powder and Kosher salt in a bowl. Pour mixture over chex mix and stir to coat solids with the butter mixture. Cover and cook for 1 1/2 hours, stirring occasionally. Remove from heat allow to cool before packing in resealable baggies.
Campfire Cheesy Jalapeno Dip
What you need:
- 3/4 kg. hot Italian sausage
- 1/2 can beer
- 1/2 can Rotel tomatoes
- 2 cups Velveeta, sliced into 1-inch cubes
- 2 cups shredded pepper jack
- Sliced jalapeno, for serving
- Freshly chopped cilantro, for serving
- Tortilla chips, for serving
Cook Italian sausage in a large cast iron over a campfire for 5-6 minutes or until cooked through. Add the beer and let simmer for 3 minutes. Add the Rotel tomatoes, Velveeta and pepper jack and stir until cheese have melted and ingredients are well-combined. Top with sliced jalapeno and cilantro. Serve warm with tortilla chips.
Healthy Choco-Chip and Peanut Butter Balls
What you need:
- 1 1/4 cups old fashioned oats
- 3/4 cup natural peanut butter
- 1/2 cup unsweetened shredded coconut
- 1/4 cup mini chocolate chips
- 1/4 cup honey
- 2 tablespoons milk
- 2 tablespoons chia seeds
- 2 tablespoons flax seeds
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
Mix together oats, coconut, chocolate chips, chia seeds, flax seeds and cinnamon in a large bowl. Add peanut butter, honey, vanilla and milk. Roll mixture into balls and place on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes, or until chilled.
